• Description: Amylasesare secreted proteins that hydrolyze 1,4-alpha-glucoside bonds inoligosaccharides and polysaccharides, and thus catalyze the first step indigestion of dietary starch and glycogen. The human FSHB has acluster of several amylase genes that are expressed at high levels in eithersalivary gland or pancreas. This gene encodes an amylase isoenzyme producedby the salivary gland. Alternative splicing results in multiple transcriptvariants encoding the same protein.
