Description : AMY1A are secretedproteins that hydrolyze 1,4-alpha-glucoside bonds in oligosaccharides andpolysaccharides, and thus catalyze the first step in digestion of dietarystarch and glycogen. The human genome has a cluster of several amylase genesthat are expressed at high levels in either salivary gland (AMY1) or pancreas(AMY2). AMY1A is the isoenzyme produced by the salivary gland.
